Autumn Pear Royale (Martini-Style)

Why This Works

Sauternes brings honeyed, apricot-like richness; dry sparkling cider cuts it with effervescence; and clear pear eau de vie ties the two together with pure pear aromatics. Stirring rather than shaking keeps it crystal clear and silky.

Ingredients

  • 1½ oz (45ml) pear brandy (eau de vie de poire — clear, not aged)
  • 1½ oz (45ml) Sauternes, chilled
  • 1½-2 oz (45-60ml) sparkling hard cider, chilled — clear, crisp, and dry
  • 1 thin lemon twist or thin pear slice, for garnish (optional)
  • Ice, for stirring

Method

  1. Chill the glass. Freezer for 10 minutes, or fill a martini glass with ice water while you mix.
  2. Mix the base. Add the pear brandy and Sauternes to a mixing glass filled with ice. Stir gently 15-20 seconds to chill and slightly dilute — stir, don't shake.
  3. Strain and top. Empty the martini glass and strain in the mixture. Top with the sparkling cider, pouring slowly to preserve the bubbles, and give one very gentle stir.
  4. Garnish. Express the lemon twist over the surface and drop it in, or perch a thin pear slice on the rim. Serve immediately.

Notes

  • Chill everything — cold ingredients need less ice dilution, so the flavors stay concentrated.
  • Choose a clear, dry sparkling cider, not a sweet or cloudy one.
  • For a lighter, spritz-like version: ½ oz pear brandy, 1 oz Sauternes, 5 oz sparkling cider.
  • An elegant aperitif for fall and winter occasions.
