Basque-Style Pumpkin Cheesecake (6-Inch)

Why This Works
True to the La Viña original: no crust, no sour cream (extra cream cheese makes it richer and more authentic), and a blazing 475°F oven that creates the signature burnt-caramel top while leaving the center jiggly — that jiggle sets as it cools into the creamy interior. The crumpled parchment liner is the iconic Basque look; the deflated, sunken center is part of the charm. Scaled for a 6-inch springform pan.
Ingredients
- 380g (13.5 oz / 1½ packages) cream cheese, room temperature
- 150g (¾ cup) granulated sugar
- 110g (½ cup) pumpkin puree, thick and well drained
- 75g (⅓ cup) heavy cream
- 2 whole large eggs plus 1 yolk
- 12g (1 Tbsp) all-purpose flour (or cornstarch)
- 1½ tsp vanilla extract
- 1¼ tsp pumpkin pie spice (or ¾ tsp cinnamon + ¼ tsp ground ginger + ⅛ tsp nutmeg + pinch of cloves)
- ¼ tsp kosher salt
- Small pinch of turmeric (optional, for color)
You'll also want a 6-inch springform pan (2-3 inches deep) and two 12" x 12" sheets of parchment.
Method
- Roast the pumpkin (if using fresh — 1-2 days ahead). Halve and seed a small sugar pumpkin, roast cut-side down on parchment at 375°F for 45-60 minutes until very soft, then cool, scoop, and puree smooth. Critical: drain the puree in a cheesecloth-lined strainer 30-60 minutes until thick and paste-like — watery puree makes watery cheesecake. Refrigerate until needed. (Canned works too; drain it if wet.)
- Prep the pan. Preheat to 475°F (245°C), center rack. Crumple each parchment sheet into a ball, unfold, and line the pan — first sheet pressed into the bottom and up the sides, second perpendicular in a cross pattern, excess hanging over the edges. Don't smooth out the wrinkles.
- Make the batter. Food processor (easiest): add the cream cheese (chunked), sugar, pumpkin, cream, eggs and yolk, vanilla, flour, spices, and salt; blend on high 3-4 minutes until completely smooth, scrape down, and blend 1 more minute. Stand mixer: beat the cream cheese smooth, add sugar, then pumpkin/cream/vanilla, then eggs one at a time. Whisk the flour, spices, and salt in a small bowl, temper with 3 Tbsp of batter to prevent lumps, and fold back into the main batter.
- Bake 28-35 minutes at 475°F until the top is deeply browned — almost burnt-looking is correct — the edges are set and slightly puffed, and the center still jiggles like Jell-O. (Optional check: 175-180°F an inch from the edge.) Don't overbake; the jiggle is the creaminess.
- Cool. Room temperature in the pan 1-2 hours — it will deflate and sink in the center, which is normal and desired — then refrigerate at least 2 hours, ideally overnight. Lift out by the parchment edges.
- Serve chilled or at room temperature. For clean slices, dip the knife in hot water and wipe between cuts. Optional toppings: whipped cream, caramel sauce, candied pecans.

- High heat is essential — don't be afraid of the dark color.
- Best the next day: flavors meld and the texture improves overnight.
