Hiyayakko — Chilled Tofu, Three Sauces

Why This Works

Hiyayakko is a Japanese summer classic: a block of well-chilled tofu with a sauce spooned over — no stove, so it won't heat the kitchen, and endlessly rotatable. Three sauces means three different dinners from one base. Simple, refreshing, and quietly flavorful.

Ingredients

The base:

  • 1 block silken or soft tofu, well-chilled (cold from the fridge)
  • Common garnishes: scallion, grated ginger, bonito flakes (skip for plant-based), shiso, sesame

Sauce 1 — Sweet & Spicy:

  • ½ Tbsp rice vinegar
  • ½ Tbsp soy sauce
  • Sugar or honey, to taste (the sweet)
  • Chili oil / la-yu, to taste (the spicy)
  • Scallion

Sauce 2 — Ponzu:

  • 1 Tbsp rice vinegar
  • 1½ Tbsp soy sauce
  • ½-1 Tbsp lemon juice
  • Grated ginger and scallion, to lift it

Sauce 3 — Basil Tomato:

  • 1 Tbsp olive oil
  • 1 tsp soy sauce
  • Parmesan cheese, to taste (sub nutritional yeast or vegan parm to keep it plant-based)
  • Fresh basil leaves
  • Cherry tomatoes

Method

  1. Drain the chilled tofu gently. Cut into cubes or leave the block whole.
  2. Whisk together your chosen sauce. The amounts are approximate — start small, taste, adjust.
  3. Spoon the sauce over the tofu and finish with garnishes. Serve immediately, cold.

Notes

  • As a full dinner, not just a starter: tofu alone is pale and modest, so build around it — a bowl of chilled edamame for extra protein, and lots of color: the basil-tomato sauce, scallion, shiso, grated ginger, radish, microgreens. A rainbow around the white tofu. A quick cucumber-wakame sunomono or a bean side rounds it out.
  • The Basil Tomato sauce is the most colorful of the three and the most substantial.
  • Best on hot summer nights — the whole point is chilled.
