Maple-Pecan Sticky Buns

Why This Works

The dough and assembled rolls are built the day before, so on baking day all that's left is a rise and a bake — ideal for a holiday brunch. A buttermilk dough stays tender, and the maple caramel with toasted pecans becomes the topping when the pan is flipped.

Ingredients

Dough:

  • Active dry yeast (2 tsp)
  • Buttermilk (1 cup, warmed to 100°F)
  • Granulated sugar (2 Tbsp)
  • All-purpose flour (4¼ cups, plus more as needed)
  • Kosher salt (1¼ tsp)
  • Unsalted butter (8 Tbsp, softened, cut into pieces)
  • Large eggs (3, lightly beaten)

Topping:

  • Maple syrup (½ cup)
  • Light brown sugar (½ cup, packed)
  • Unsalted butter (6 Tbsp)
  • Kosher salt (½ tsp)
  • Toasted chopped pecans (2 cups)

Filling:

  • Light brown sugar (⅔ cup, packed)
  • Ground cinnamon (1 Tbsp)
  • Ground cardamom (1 tsp)
  • Kosher salt (¼ tsp)
  • Unsalted butter (6 Tbsp, very soft)

Method

Day 1 — evening:

  1. Make the dough. Activate the yeast in the warm buttermilk with the sugar (5 minutes). Mix the dough in a stand mixer (about 10 minutes), then let it rise in a buttered bowl for 1 hour. Refrigerate at least 1 hour, or overnight.
  2. Assemble the rolls. Make the topping: cook the maple syrup mixture, pour it into the pan, and scatter the pecans over it. Make the filling: mix the sugar and spices. Roll out the dough, spread with the soft butter, and add the filling. Cut into 12 pieces, place in the pan, cover, and refrigerate until baking day.

Day 2 — morning: 3. Rise and bake. Remove the pan from the fridge and let the rolls rise 1-2 hours until puffy. Bake at 350°F for 30-35 minutes. Cool 5 minutes, then flip onto a serving tray. Serve warm.

Notes

Dough success: the buttermilk should be right at 100°F for the yeast. The dough is ready when it's billowy and clearing the sides of the bowl; add flour gradually if too sticky (up to 4 Tbsp extra).

Assembly: roll the dough to ¼-inch thickness (a 12x16 rectangle) and leave a 1-inch unbuttered edge for sealing. Dental floss makes the cleanest cuts — slide it under, cross over, pull.

The flip: flip within 5 minutes of baking or the caramel hardens. Run a knife around the edges first, place the tray on top, and flip decisively. If caramel sticks, warm the pan briefly.

Storage: best served warm the day of baking; reheat individual rolls 15-20 seconds in the microwave. Assembled rolls can be refrigerated up to 24 hours before baking.

Altitude: may need slightly more flour at high altitude.

Variations: try walnuts, or add orange zest to the filling. The cardamom is a key flavor — don't skip it.
