Mega Mexican Bowl Feast

Why This Works
Five components — spiced rice, mushroom-enhanced soyrizo, beans, roasted vegetables, and fresh toppings — that mix and match all week. Toasting the rice until golden and letting the soyrizo crisp are what separate this from a pile of ingredients.
Ingredients
Mexican rice
- 2 cups brown rice (or white rice for a 20-minute version)
- 3 Tbsp olive oil
- 1/4 cup onion, finely diced
- 3 cloves garlic, minced
- 1/4 cup tomato paste
- 4.5 cups vegetable broth (3.5 cups for white rice)
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder
- 1 tsp salt (less if using salted broth)
- 1/4 tsp black pepper
- Juice from 1 lime (at end)
- 1/4 cup cilantro, chopped (at end)
Mushroom-enhanced soyrizo (scaled batch)
- 28 oz extra firm tofu, pressed and crumbled
- 306g mixed mushrooms, finely minced in a food processor
- 3.5 Tbsp olive oil
- 5 cloves garlic, minced
- 3.5 Tbsp apple cider vinegar
- 1.75 Tbsp soy sauce
- Spice mix: 3.5 Tbsp chili powder, 1.75 Tbsp smoked paprika, 3.5 tsp ground cumin, 1.75 tsp ground coriander, 1.75 tsp dried oregano, scant 1 tsp ground cinnamon (essential), heaping 1/4 tsp ground cloves, 1/4-1/2 tsp cayenne, 1.75 tsp salt, scant 1 tsp black pepper
Roasted vegetables
- 2 bell peppers, sliced
- 1 large onion, sliced
- 2-3 jalapeños, whole or halved
- 2 Tbsp olive oil
- Salt and pepper
Toppings
- 2 medium tomatoes, diced
- 3 bunches cilantro, chopped
- 2 jalapeños, sliced thin
- 6 limes, cut into wedges
- Guacamole (3-4 avocados)
- Chipotle-labneh crema: 1/2 cup labneh + 1-2 tsp adobo sauce + lime juice
- Salsa seca, for crunch
- Queso fresco, crumbled
- Cooked beans of your choice
Method
- Rice: Heat oil in a large pot over medium-high. Add rice and stir constantly 5-7 minutes until golden and nutty. Add onion, cook 2 minutes; add garlic, cook 30 seconds. Add tomato paste and stir 1 minute until darkened. Add spices, stir 30 seconds. Pour in broth (it will sizzle), bring to a boil, then reduce to low, cover, and simmer 40-45 minutes for brown rice (18-20 for white). Rest 5 minutes off heat, then fluff with lime juice and cilantro.
- Soyrizo: Press tofu 20 minutes, then crumble. Pulse mushrooms in a food processor to a fine mince (not a puree). Mix the spices in a small bowl. Heat oil in a large skillet over medium-high; cook mushrooms 5-7 minutes until their moisture evaporates. Add tofu and cook 5 minutes for golden edges. Add garlic and the spice mix, cook 2 minutes until fragrant. Add vinegar and soy sauce, cook until absorbed, then keep cooking 5-10 minutes for crispy edges.
- Vegetables: Toss peppers, onion, and jalapeños with oil, salt, and pepper. Roast at 425°F for 25-30 minutes until the edges caramelize.
- Assemble bowls: 3/4 cup rice as the base; sections of soyrizo, roasted vegetables, and beans; a dollop of guacamole in the center; fresh tomatoes and cilantro; finish with queso fresco, a drizzle of chipotle crema, salsa seca, and a lime wedge.
Notes
- Toast the rice until truly golden — that's where the texture comes from.
- Press the tofu well; it's what lets the soyrizo crisp.
- The cinnamon in the soyrizo is key — don't skip it.
- At altitude (~5,000 ft), add extra liquid and time to the rice.
- Keep components separate until serving. Rice and soyrizo keep 5 days refrigerated or 3 months frozen; fresh toppings keep 3-4 days.
- The components rework easily into soft tacos, loaded nachos, breakfast burritos, and rice bowls.
