Molasses Ginger Cookies

Why This Works
A chilled, softly scoopable dough keeps these cookies from spreading and gives them the smooth, crackled tops that make them ideal for decorating. Both glaze options are dairy-free, and the base works with oil or vegan butter.
Ingredients
Wet:
- Neutral oil or softened vegan butter (⅓ cup)
- Dark brown sugar (⅓ cup)
- Molasses (¼ cup)
- Egg (1 large, lightly beaten; use about ¾ of it if the dough seems too wet)
- Vanilla extract (1 tsp)
Dry:
- All-purpose flour (1 cup; optionally swap up to ¼ cup for rye flour for deeper flavor)
- Ground ginger (1 tsp)
- Ground cinnamon (½ tsp)
- Ground nutmeg (⅛ tsp)
- Ground cloves (⅛ tsp)
- Baking soda (½ tsp)
- Salt (pinch)
Simple glaze:
- Powdered sugar (1 cup)
- Plant milk (1-2 Tbsp)
- Vanilla extract (½ tsp)
- Lemon (optional, a small squeeze for brightness)
- Food coloring (optional)
Alternative — vegan royal icing:
- Powdered sugar (1 cup)
- Aquafaba (1 Tbsp — the liquid from canned chickpeas)
- Lemon juice (¼ tsp)
Method
- Make the wet mix. In a medium bowl, whisk together the oil (or butter), brown sugar, molasses, egg, and vanilla until glossy and fully combined.
- Whisk the dry ingredients. In a separate bowl, combine flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Whisk to distribute the spices evenly.
- Combine. Add the dry ingredients to the wet and fold gently with a spatula until no dry streaks remain. If the dough is very soft, add 1-3 Tbsp flour (AP or rye), 1 Tbsp at a time, until softly scoopable.
- Chill. Cover with plastic wrap pressed onto the surface and refrigerate at least 30 minutes, up to 48 hours.
- Bake. Preheat the oven to 350°F and line a baking sheet with parchment. Scoop 1-1.5 Tbsp portions, roll into smooth balls, space them out, and gently press the tops to flatten slightly. Bake 8-10 minutes, until the edges are set and the tops show cracks. Cool 5 minutes on the tray, then transfer to a wire rack.
- Decorate. For the simple glaze, whisk powdered sugar, plant milk, vanilla, and optional lemon until smooth. For royal icing, whisk powdered sugar, aquafaba, and lemon juice until smooth and thick. Decorate only once the cookies are fully cooled (1-6 hours after baking).
Notes
Dough consistency: the dough should be softly scoopable after chilling, not sticky. Chilling is essential for texture and to prevent spreading. If it's too wet before chilling, add flour 1 Tbsp at a time — or hold back a quarter of the beaten egg.
Rye variation: rye flour adds a deeper, earthier molasses flavor. Swap no more than ¼ cup or the cookies get dense.
Make-ahead: dough chills up to 48 hours; dough balls freeze well (add 1-2 minutes to the bake time); baked cookies keep 3-4 days at room temperature in an airtight container.
Icing tips: the simple glaze is best for flooding whole cookies; royal icing pipes better for detail work. Too thick — add liquid 1 tsp at a time; too thin — add powdered sugar 1 Tbsp at a time.
Troubleshooting: cookies spread too much — dough wasn't chilled long enough or the oven ran cold. Too hard — overbaked; pull them 1-2 minutes earlier next batch. Cracked tops are normal for ginger cookies — embrace it.
