Pumpkin Parker House Rolls (Small Batch)

Why This Works

Pumpkin puree does for these rolls what sweet potato does in Southern pull-apart rolls: moisture retention, a tender crumb, subtle sweetness, and a beautiful golden-orange color. The buttermilk-plus-baking-soda combination balances the pumpkin's earthiness with a slight tang, and the rectangular fold method keeps the rolls from popping open during baking.

Ingredients

  • ¾ cup (90g) all-purpose flour, plus 1-2 Tbsp extra for adjusting
  • ¾ tsp (2g) instant yeast
  • 2¼ tsp (10g) granulated sugar
  • ⅓ tsp (2g) salt
  • ⅛ tsp baking soda
  • 3-4 Tbsp (~50g) pumpkin puree (canned pure pumpkin — not pie filling — or fresh roasted, mashed smooth)
  • 2¼ tsp (11g) unsalted butter, room temperature, plus 1 Tbsp (14g) melted for brushing
  • 3 Tbsp (43g) buttermilk, room temperature
  • 1 Tbsp beaten egg (about ¼ of a large egg)

You'll also want a 6-inch round springform pan, a rolling pin, and a pastry brush.

Method

  1. Mix the pumpkin base. In a small bowl, mash the pumpkin puree completely smooth. Add the room-temperature butter and buttermilk and mix until well combined.
  2. Make the dough. In a separate bowl, combine the flour, yeast, sugar, salt, and baking soda. Add the pumpkin mixture and beaten egg and stir until a shaggy dough forms. It should be slightly sticky but workable — the pumpkin adds moisture.
  3. Knead. Turn onto a lightly floured surface and knead 10 minutes by hand (or 7-8 minutes in a stand mixer on medium-low) until smooth and elastic. If it feels too wet, add flour 1 Tbsp at a time.
  4. First rise (60-75 minutes at 5,280 ft). Place in a buttered bowl, cover, and rise in a warm, draft-free spot until puffy and airy. Watch visual cues, not the clock.
  5. Shape. On a clean, dry, unfloured surface, roll the dough into roughly a 4" x 6" rectangle and brush generously with melted butter. Cut lengthwise into two 2" x 6" strips, fold each strip lengthwise so the bottom edge extends ½" beyond the top, then cut each folded strip crosswise in two for 4 rolls.
  6. Pan. Butter the springform pan, flip the rolls smooth-side up, arrange (1 center + 3 around, or 2x2), and brush the tops with melted butter.
  7. Second rise (30-45 minutes at altitude). Cover loosely and rise until puffy and touching. Don't over-proof.
  8. Bake. Preheat to 365°F about 15 minutes before the rise finishes. Bake 20-25 minutes until golden brown and set in the center — 190°F internal.
  9. Finish. Brush with remaining melted butter while hot, cool 5 minutes in the pan, and serve warm — honey butter or maple butter is the natural pairing.

Notes

  • Altitude (5,280 ft): rises run 25-35% faster than sea level, so trust "puffy and touching" over the timer; bake at 365°F instead of 350°F; weigh the flour. Because pumpkin adds liquid, you may need extra flour here rather than the usual extra liquid.
  • Flavor: more subtle and earthy than sweet potato — works with both savory and sweet accompaniments; great with cranberry sauce for the holidays.
  • Make-ahead: through the first rise, refrigerate overnight, shape the next day.
  • Scaling: linear (4 → 8 → 12 → 16 rolls); 9"x13" pan for 16.
  • Storage: airtight at room temperature 2-3 days, or freeze up to 2 months. Reheat at 300°F for 5 minutes.
