Refrigerator Dill Pickles

Why This Works

No canning — an equal-parts water and vinegar brine, barely warmed so the cucumbers never cook, lives in the fridge and turns crisp cucumbers into garlicky-dill pickles in a day.

Ingredients

  • About 1 lb cucumbers — English and baby seedless both work great (baby = extra crunch) — sliced into spears or 1/4-inch coins
  • 3-4 sprigs fresh dill (or 1-2 tsp dill seed)
  • 3-4 garlic cloves, smashed

Brine

  • 1 cup water
  • 1 cup apple cider vinegar (or distilled white for a cleaner, classic taste)
  • 1 Tbsp salt
  • 1 tsp sugar (optional, rounds the tang)

Optional spices

  • 1 tsp black peppercorns
  • 1/2 tsp coriander seeds
  • Pinch red pepper flakes
  • Mustard seed, if you have it

Method

  1. Pack the cut cucumbers tightly into a clean quart jar with the dill, garlic, and any whole spices.
  2. Brine: combine the water, vinegar, salt, and sugar in a saucepan and warm just until dissolved — don't boil hard. (Or shake everything cold in a jar until dissolved.)
  3. Pour the brine over to fully cover the cucumbers.
  4. Cool to room temperature, lid, and refrigerate.
  5. Ready in about 24 hours, best at 2-3 days. Keeps refrigerated 2-3 weeks. Not shelf-stable — fridge only.

Notes

  • For maximum crunch: keep them cold, slice fresh, and don't over-warm the brine. A grape or oak leaf, or a tiny pinch of black tea (tannins), keeps them extra crisp — optional.
  • Great on burgers, as a mezze topping with hummus and bean dips, chopped into a quick relish, or straight from the jar.
