Restaurant-Style Mexican Rice

Why This Works
Toasting the rice in oil until golden and nutty is the restaurant secret — it keeps every grain fluffy and separate instead of mushy, and briefly cooking the tomato paste deepens the flavor.
Ingredients
Base
- Long-grain white rice (2 cups — jasmine or basmati work well)
- Olive oil (3 Tbsp)
- Onion (1/4 cup, finely diced)
- Garlic (3 cloves, minced)
- Tomato paste (1/4 cup) or 2 fresh tomatoes, pureed
- Vegetable broth (3.5 cups) or water plus bouillon
Seasonings
- Ground cumin (1 tsp)
- Smoked paprika (1/2 tsp)
- Chili powder (1/2 tsp)
- Salt (1 tsp, less if using salted broth)
- Black pepper (1/4 tsp)
Optional additions
- Frozen peas and carrots (1/2 cup, add in the last 5 minutes)
- Jalapeño (1, minced, for heat)
- Lime juice (from 1 lime, add at the end)
- Fresh cilantro (1/4 cup, stirred in at the end)
Method
- Toast the rice (7 minutes) — the crucial step. Heat the oil in a large pot over medium-high heat. Add the rice and stir constantly for 5-7 minutes until golden and nutty-smelling. Don't skip this — it prevents mushy rice.
- Add aromatics. Add the diced onion and cook 2 minutes, then the garlic for 30 seconds. Add the tomato paste and stir for 1 minute until darkened.
- Season and simmer. Add all the spices and stir to coat the rice evenly. Pour in the broth all at once (it will sizzle), bring to a rolling boil, then reduce the heat to low and cover tightly. Simmer 18-20 minutes. Do not lift the lid or stir during cooking.
- Rest and fluff. Turn off the heat and keep covered 5 minutes. Fluff gently with a fork, add lime juice and cilantro if using, and adjust salt.
Notes
- No peeking: Lifting the lid releases steam and makes the rice mushy.
- Broth vs water: Broth adds much more flavor.
- Make-ahead friendly: Actually improves after a day. Keeps 5 days refrigerated or 3 months frozen in portions.
- Reheating: Microwave with a splash of water, covered — or pan-fry with oil for crispy rice. Add fresh lime and cilantro after reheating.
- Variations: Add corn, black beans, or diced peppers. Doubles easily for meal prep.
