SF Giants Crazy Crab Sandwich

Why This Works
The Oracle Park secret is the butter-to-crab ratio and restraint — minimal mayo, big lumps of sweet Dungeness, and garlic butter cooked (not raw) so it grills into the sourdough mellow and rich.
Ingredients
Crab salad
- 2 whole cooked Dungeness crabs (yields 15-16 oz picked meat)
- 3 Tbsp mayonnaise, high quality
- 1-2 tsp fresh lemon juice
- Salt and black pepper, to taste
Garlic bread
- 6 slices sourdough, 1/2-3/4" thick (par-baked loaves from a good bakery work well)
- 6-8 Tbsp unsalted butter, softened
- 4-5 cloves fresh garlic, minced
- 1 Tbsp extra-virgin olive oil
- 1/2 tsp kosher salt
- Pinch red pepper flakes (optional)
Assembly
- 3 slices ripe tomato, or halved cherry tomatoes
- 3 Tbsp chopped flat-leaf parsley
- Lemon wedges for serving
- Freshly ground black pepper
Method
- Bake the bread (if using par-baked loaves): bake per package instructions, typically 12-15 minutes at 375-425°F until golden. Cool slightly, then slice into 6 thick pieces.
- Pick the crab (30-40 minutes): remove the triangular belly flap, turn belly-down and lift off the back shell from the rear. Remove the reddish membrane, discard the spongy gills, and rinse the body. Push the body meat from its channels with a crab leg tip or chopstick, don't miss the knuckle meat (the sweetest part), and gently crack legs and claws with a nutcracker to keep the meat in large chunks — kitchen shears work well for cutting leg shells lengthwise. Expect 15-16 oz total; a 1.75-2 lb cooked crab yields 7.5-8 oz.
- Make the crab mixture: pat the meat gently dry with paper towels. Whisk the mayo, lemon juice, and a pinch of salt and pepper in a medium bowl, then fold in the crab with a rubber spatula until just combined. Don't overmix — preserve the lumps. Taste and set aside.
- Make the garlic butter: combine the butter, garlic, salt, and red pepper flakes in a small saucepan over medium heat, stirring constantly, until the garlic sizzles and turns golden, about 2 minutes — do not let it brown. Off heat, stir in the olive oil (it helps the butter spread and penetrate the bread).
- Grill the sourdough: brush garlic butter generously on one side of each slice and cook butter-side down in a skillet or griddle over medium heat, 2-3 minutes, until deep golden with crispy edges. Only the side facing the filling needs toasting.
- Assemble: grilled side up, add tomato, heap on 5-6 oz crab mixture, sprinkle with parsley and a crack of pepper, and top with the second slice grilled-side in.
- Serve immediately with lemon wedges while the bread is warm and crispy.
Notes
- Handle the crab gently and mix no more than 30 minutes before serving.
- Make-ahead: crab can be picked 4 hours ahead (refrigerated, covered); garlic butter keeps 2 days (rewarm gently).
- Patting the crab dry prevents a watery filling; burnt garlic is bitter, so pull it at golden.
- Grill the bread just before serving — don't skip it.
