Spiced Black Beans with Roasted Delicata & Sungold Tomato Puree

Why This Works

Ingredients
Slow-cooked spiced black beans
- Black beans (1 lb dried, soaked 12-24 hours)
- Vegetable broth (enough to cover by 2-3 inches — homemade if you have it)
- Bay leaves (2-3)
- Smoked paprika (1 tsp)
- Ground coriander (1/2 tsp)
- Garlic cloves (3-4, crushed whole)
- Cinnamon stick (1)
- Dried chipotle pepper (1, optional)
- Salt (1-2 tsp, to taste — add in the last 30 minutes)
- Maple syrup or honey (1 Tbsp — add in the last 30 minutes)
- Lime juice (from 1 lime — add in the last 30 minutes)
Roasted delicata squash
- Delicata squash (1-2 medium)
- Olive oil (2 Tbsp)
- Salt and pepper (to taste)
Assembly and garnish
- Sungold (or other cherry) tomato puree (1 cup)
- Queso fresco (4-6 oz, crumbled)
- Fresh marjoram (small handful)
- Pepitas (1/4 cup, toasted)
- Lime (for zest and wedges)
Method
Beans (start in the morning)
- Drain and rinse the soaked beans.
- Add to a slow cooker with broth covering by 2-3 inches.
- Add the bay leaves, smoked paprika, coriander, garlic, cinnamon stick, and chipotle if using — hold the salt, maple, and lime.
- Cook on LOW for 6-8 hours, checking at 6 hours for tenderness.
- In the last 30 minutes, add the salt, maple syrup, and lime juice. Keep warm until serving.
Squash (about 45 minutes before serving) 6. Preheat the oven to 425°F. 7. Slice the squash into 1/2-inch half-moons (no peeling needed) and remove the seeds. 8. Toss with olive oil, salt, and pepper. 9. Roast 25-30 minutes, flipping once, until caramelized.
Finish and plate 10. While the squash roasts, gently warm the tomato puree, toast the pepitas, crumble the queso fresco, and pick the marjoram leaves. 11. Plate bottom to top: warm tomato puree as the base, a ladle of beans with their cooking liquid, roasted delicata fanned on top, a generous crumble of queso fresco, marjoram leaves (torn if large), toasted pepitas, then lime zest and a final drizzle of bean liquid.
