Spicy Mushroom Lasagna

Why This Works
A pound and a half of mixed mushrooms, cooked down until their liquid evaporates, gives the tomato sauce a meaty depth, and chili flakes keep the richness from going flat. It's built to be made ahead — it reheats and freezes beautifully.
Ingredients
Mushroom tomato sauce
- 2-3 tbsp olive oil
- 1 large onion or shallot, diced
- 4-6 cloves garlic, minced
- 1 lb cremini mushrooms, sliced
- 8 oz mixed mushrooms (shiitake, oyster, etc.)
- 1-2 tsp chili flakes, to taste
- 28 oz can crushed tomatoes
- Salt and black pepper
- Fresh thyme or oregano (optional)
Layers
- 1 box lasagna noodles (no-boil or regular)
- 15 oz ricotta or cottage cheese
- 2 cups shredded mozzarella
- 1 cup grated Parmesan
Method
- Make the sauce. Heat the olive oil in a large skillet, sauté the onion until soft, then add the garlic. Add all the mushrooms and cook until their liquid evaporates. Add the chili flakes and crushed tomatoes, simmer 15-20 minutes, and season with salt, pepper, and herbs.
- Assemble. Spread a thin layer of sauce in a 9x13 baking dish, then layer noodles, ricotta, sauce, and mozzarella. Repeat 3-4 times, finishing with the remaining sauce and cheeses.
- Bake. Cover with foil and bake at 375°F for 45-60 minutes, uncovering the last 10-15 minutes to brown the top. Rest 10-15 minutes before cutting.
Notes
- Spice level: 1 tsp chili flakes is mild, 2 tsp medium-spicy.
- Make-ahead: cool completely before refrigerating. Reheat covered at 350°F for 30-40 minutes.
- Keeps 4-5 days refrigerated or up to 3 months frozen.
- Variations: plant-based cheeses for a vegan version; add spinach or kale between the layers; vary the mushroom mix.
