Sweet Potato Buttermilk Pull-Apart Rolls

Why This Works

Sweet potato is a quintessential soul food ingredient, and here it earns its keep structurally: mashed into the dough with buttermilk and butter, it gives the rolls a luscious mouthfeel, round flavor, and a tender crumb that stays moist.

Ingredients

  • 6 oz orange-fleshed sweet potato (1 small), peeled and cut into 1-inch chunks
  • 1 tsp salt for boiling, plus 1½ tsp for the dough
  • ½ cup buttermilk
  • ¼ cup unsalted butter, room temperature, plus 3 Tbsp melted for brushing and extra for greasing
  • 4 cups (512g) all-purpose flour, plus more as needed
  • 2¼ tsp (1 envelope) instant or active dry yeast
  • 2 Tbsp granulated sugar
  • 2 large eggs

You'll also want a 9x13-inch baking pan and, ideally, a kitchen scale.

Method

  1. Boil the sweet potato. Cover the chunks with water in a small saucepan, add 1 tsp salt, bring to a boil, then reduce to medium and gently boil until very tender, 10-13 minutes.
  2. Make the base. Drain and transfer to a large bowl (or stand mixer bowl). Mash smooth, then mix in the buttermilk and room-temperature butter.
  3. Mix the dough. Stand mixer: beat the sweet potato mixture with the paddle on medium-low until fairly smooth, about 5 minutes. Add the flour, yeast, sugar, eggs, and 1½ tsp salt all at once and mix, scraping as needed, until the dough is smooth and sticky and pulls away from the sides, about 8 minutes. If very sticky, add flour 1-2 Tbsp at a time. By hand: whisk the base smooth, stir in the remaining ingredients with a wooden spoon, then knead on a lightly floured surface until smooth and elastic, about 8 minutes.
  4. First rise. Transfer to a buttered bowl, cover, and rise in a warm, draft-free spot until more than doubled, about 1½ hours.
  5. Shape. On a clean, ungreased counter, divide the dough into 15 equal pieces (about 65g each). Cup each piece under your palm and roll in quick circular motions to form a tight ball with a tiny seam on the bottom. Arrange in a buttered 9x13 pan in 3 rows of 5 and brush with melted butter.
  6. Second rise. Cover loosely with a towel and let rise in a warm place until puffy, doubled, and filling the pan, about 1 hour.
  7. Bake. Preheat to 375°F about 15 minutes before the rise finishes. Bake until golden brown, 15-20 minutes. Transfer the pan to a rack and brush the rolls gently with more melted butter.
  8. Cool. Rest 10 minutes in the pan, turn out onto the rack and invert bottom-side down, and cool about 20 minutes before serving.

Notes

  • Active dry and instant yeast are interchangeable here.
  • The dough should stay slightly sticky — resist over-flouring.
  • The circular shaping motion builds surface tension for beautifully round rolls; a scale (65g each) keeps them uniform.
  • Make-ahead: through the first rise, refrigerate overnight, shape the next day.
  • Storage: airtight at room temperature 2-3 days or frozen up to 2 months; reheat at 300°F for 5-10 minutes.
