Waldorf Slaw

Why This Works

The classic Waldorf reimagined as a slaw — apples, walnuts, celery, and grapes, but with more vegetables and no heavy mayo. Blending a scoop of the lemony apples with miso, ginger, and a date makes a creamy dressing from the salad itself.

Ingredients

  • 3-4 Gala or Fuji apples, cored, 1/2-inch dice
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp apple cider vinegar
  • 1 soft pitted date, soaked 10 minutes in hot water, drained (optional)
  • 1 tsp grated fresh ginger
  • 1 tsp white miso paste
  • 1/4 tsp ground black pepper
  • 3 cups shredded cabbage
  • 1 large carrot, grated
  • 1/2 cup seedless red grapes, halved
  • 1 celery rib, minced
  • 1/2 cup chopped walnuts
  • 2 scallions, minced

Method

  1. Toss the diced apples with the lemon juice to coat.
  2. Dressing: scoop 1/2 cup of the apple mixture into a blender with 2 Tbsp water, the apple cider vinegar, date (if using), ginger, miso, and black pepper. Blend smooth.
  3. To the big bowl of apples, add the cabbage, carrot, grapes, celery, walnuts, and scallions. Add the dressing, toss gently, and adjust seasoning.

Notes

  • Cruciferous cabbage plus carrot and colorful fruit make this high in fiber and antioxidants; the walnuts cover your daily nuts.
  • Protein is modest — as a starter, pair it with a bean or tofu main.
