Warm-Spiced Harissa Cashew Cream with Fenugreek & Za'atar

Why This Works

Blooming the spices in olive oil before blending unlocks their full flavor and builds an infused-oil base, while soaked cashews blend into a velvety cream that coats like a béchamel — no dairy needed.

Ingredients

  • Raw cashews (1 1/2 cups, soaked 1-2 hours or simmered 10 minutes)
  • Olive oil (3 Tbsp)
  • Garlic (2 cloves, minced)
  • Za'atar (1 Tbsp)
  • Dried fenugreek leaves (kasuri methi) (1-1 1/2 tsp, crushed)
  • Sumac (1 tsp)
  • Ground cumin (1 tsp)
  • Smoked paprika (1 tsp)
  • Harissa paste (4-6 tsp / 2-3 Tbsp, to taste)
  • Roasted red peppers (2) OR tomato paste (2 Tbsp)
  • Lemon juice (4 Tbsp) OR lemon juice (2 Tbsp) plus apple cider vinegar (2 tsp)
  • Maple syrup (2-4 tsp) OR dates (1-2 small, chopped)
  • Water (1 cup, plus more to thin)
  • Salt (1/2 tsp, more to taste)

Method

  1. Prepare the cashews. Soaking (preferred): cover with water and soak 1-2 hours, then drain. Quick method: simmer in water for 10 minutes, then drain.
  2. Bloom the aromatics. Heat olive oil in a small skillet over medium-low heat. Add the minced garlic and sauté until fragrant but not browned, about 30 seconds.
  3. Stir in the za'atar, crushed fenugreek leaves, sumac, cumin, and smoked paprika. Toast gently for 30-60 seconds, until aromatic and lightly nutty. Remove from heat — this infused oil forms the flavor base.
  4. Blend. Combine the soaked cashews, harissa paste, lemon juice, roasted red peppers (or tomato paste), maple syrup (or dates), salt, water, and the infused oil mixture in a blender. Blend until completely smooth and creamy.
  5. Adjust consistency, adding water gradually — thicker for a spread, thinner for a drizzle.
  6. Taste and adjust. More lemon or sumac for brightness, more harissa or salt for punch.
  7. Serve warm. Warm gently before serving (do not boil — it will thicken). It should coat the back of a spoon like a velvety béchamel.

Notes

  • Serving ideas: Toss with roasted spaghetti squash strands, spoon over black bean meatballs with parsley and lemon, drizzle over roasted cauliflower, carrots, or sweet potatoes, use as a base layer in grain bowls or wraps, spread on toast, or serve as a dip for vegetables or pita.
  • Fenugreek: Adds warm, slightly sweet maple-like notes; don't skip it if you have it.
  • Harissa intensity: Start with less (4 tsp) and add more to taste.
  • Roasted peppers vs tomato paste: Red peppers add sweetness and body; tomato paste is a quicker alternative.
  • Consistency control: The sauce thickens when warmed, so keep it slightly thinner than the final texture you want.
  • Storage: Refrigerate 5-7 days or freeze up to 1 month. Thickens in the fridge; thin with water when reheating.
  • Make-ahead: Flavor improves after 24 hours as the spices meld.
