Whipped Tofu Miso Dip with Caramelized Onions

Why This Works
Miso brings umami depth, roasted cauliflower adds subtle sweetness, caramelized onions bring richness, and lemon keeps it bright. Blending the onions into the base — rather than folding them in — keeps the dip silky instead of stringy.
Ingredients
Base
- Extra-firm tofu (1 block, about 14 oz)
- Raw cashews (1 cup)
- Roasted cauliflower (1 cup — leftovers work well)
- White miso (2-3 Tbsp)
- Garlic (1-2 cloves)
- Lemon juice (2 Tbsp)
- Olive oil (2 Tbsp)
- Water (as needed for blending)
- Salt (to taste)
Fold-ins
- Yellow or white onion (1-2 large, for caramelizing)
- Fresh herbs, chopped (parsley, chives, dill — whatever you have)
Method
- Soak the cashews. Overnight in the fridge, 2-4 hours in hot water, or quick method: boil 15 minutes and drain.
- Caramelize the onions (30-40 min). Slice onions into thin half-moons. Heat a splash of oil in a large skillet over medium-low heat, add the onions, and cook low and slow, stirring occasionally, with pinches of salt to help release moisture. Done when deep golden brown and jammy. Set aside to cool.
- Blend the base. Drain the cashews and blend with about 1/2 cup water until completely smooth. Add the tofu, roasted cauliflower, miso, garlic, lemon juice, and olive oil.
- Add the caramelized onions to the blender and blend until silky smooth, adding water as needed for consistency. Optional: add 1 tsp rice wine vinegar or apple cider vinegar for extra brightness.
- Taste and adjust — more miso for umami, lemon or vinegar for brightness, salt as needed.
- Finish. Transfer to a bowl and fold in the chopped fresh herbs (chives are great here). Taste once more.
- Chill. Refrigerate at least 1 hour, preferably overnight — the flavors meld and the texture firms up.
Notes
- Blend the onions, don't fold them. Hand-folded caramelized onions get stringy when dipping. Blend them into the base; only the herbs get folded in at the end for freshness.
- Texture goal: Silky smooth throughout, scoopable but not stiff. Extra-firm tofu needs more liquid than silken — adjust as you blend.
- Make-ahead: This dip is better the next day. Keeps 4-5 days refrigerated; bring to room temperature 15 minutes before serving.
- Serving: Crudités, pita chips or crackers, or spread on sandwiches and wraps.
- Variations: Roasted garlic instead of raw for a mellower flavor; a spoonful of gochujang for heat; everything bagel seasoning on top; a drizzle of chili oil before serving.
- Blender tip: This thick mixture can overheat a high-speed blender — work in short bursts and add extra water to help it move. A food processor works as backup.
